Take a Fresh Approach
Appetizer
Buy MORE fresh produce. While frozen veggies and canned fruits (in juice, not syrup) are healthy alternatives, nothing beats fresh produce when it comes to nutritional value and great taste.
Main Course
Here are some tips from Evelyn Gezo, RD to keep your fruits and vegetables fresh, nutritious and attractive:
- Only purchase quantities that will be used within one to five days unless you plan to freeze or can it.
- During the summer months, keep a cooler in your car if you plan more stops.
- Refrigerate items as soon as possible when you get home.
- Get to the farmers markets early, giving you the best selection of produce before it has been out in the heat too long.
- Fruits that need further ripening should be taken out of the fridge in quantities that you know you will eat within one to two days.
- Berries should be washed only when you are ready to eat them to prevent mold growth.
- Cut fruits and vegetables only when ready for use; cutting produce too far in advance exposes it to air-accelerating bacterial growth.
Dessert
I really appreciate this tips and plan to implement them ASAP. I love fresh veggies and fruit, but I get extremely frustrated when my produce starts to go bad in the fridge before I even have a chance to eat it. Since fresh produce is typically more expensive than frozen or canned, I always want to make sure that none of it goes to waste. I've also found that getting things that are "in season" helps keep costs down.
